From the very first day in 1946, when Edwin and
Margaret Kershaw started trading, all the way through to the present day,
Kershaw's story has been one of continual growth and success. From modest
beginnings the company has grown into a multi-million pound concern, with an
enviable reputation for quality and extensive product range - a range that
has evolved to meet the changing demands over five decades. The main reason
for Kershaw's successful growth has been an unwavering commitment to
quality. Stringent quality control procedures are applied at every stage, to
ensure that customers receive only those produces that deserve to carry the
name Kershaw's - a name they can trust. |

in early 1980, Kershaw's launched its
range of Seven Minute Meals, which was a remarkably advanced move
for the times. A full retail range of chicken and chips, scampi and
chips and battered cod and chips were put into retail. All were
deep-fry cooked. By 1982, the deep fat fryer boom was waning, and
Kershaw's decided to move on. That year the company launched its
first frozen curry, using a ready meal packing system with
self-venting lids that did not have to be removed before cooking.
The result was a freezer-to-oven-to-table product that could be
eaten from the tray - astonishing in 1982! |
From curries, Kershaw's
moved into frozen English roast dinners: lamb, beef, pork and chicken
served with potatoes, peas and carrots. There are now some 20 recipes in
the range, with chicken still the top seller.

Coral Island Seafood's was formed in
1989 when two men, each an expert in his own field, joined forces to
service the UK shellfish market. David Kershaw had
been purchasing cockles from fisherman Joe Langden for three years prior
to the birth of Coral Island. Unfortunately, as the cockles were fished
in the South of England they were already a day old by the time they
reached Kershaw's processing plant in the North. |

Coral Island Seafood's
came into being using Joe Langden's fishing expertise and David
Kershaw's technical knowledge and marketing flair. We first opened a
factory directly on the beach at Leigh-On-Sea, invested
in two more fishing vessels to complement the fleet and built their
reputation within the UK. Coral Island Seafood's is now one of the
largest independent cockle producers in Europe. At Coral Island
Seafood's, scrupulous attention to hygiene, safety and modern processing
methods guarantees the fresh-tasting quality of all the company's

taste is no secret. After expertly collecting the cockles, we use the
most up to date processing equipment and methods, coupled with a vast
amount of care and experience. This perfect combination keeps Coral

Expert Collection -
Our boats, equipped with the very latest technology, leave on the first
tide and return one hours ebb on the second tide. The way its been done
for generations. Our highly skilled crews ensure that the cockles reach
the shore in the freshest condition possible. This is achieved through
expert dredging and employing modern, solid handling suction methods.

| Perfect Timing - As
soon as the boats dock the meticulous processing systems begin. Time
served efficiency of our cockling plant, now takes over. Moving the
cockles through each processing stage with ultimate care and precision.
After being off-loaded, without a seconds delay, the cockles enter the
plant on a conveyor. They pass over a series of grills in the pre-wash
stage, removing the natural grit and debris also collected. Following
the thorough washing process the cockles pass into a chute, which takes
them to the boiler. here they are cooked to perfection. The next stage
sees the succulent cockle meat removed from the shells. There now takes
place three more stages of meticulous washing before moving on to the
freezing stage. The cockles pass through the hi-tech IQF freezing
tunnels and are fast frozen, ensuring that the fresh natural taste is
perfectly encapsulated. |
